Tropical Shrimp and Pasta
INGREDIENTS
- 12 oz. cooked medium shrimp, peeled and deveined or 2 cups diced cooked chicken
- 6 oz. angel hair pasta, cooked and drained
- 3/4 cup sliced pitted black olives
- 1/2 cup finely chopped red onion
- 1/2 cup fat-free or light mayonnaise
- 1/2 cup pineapple juice
- 1/4 cup bottled seafood cocktail sauce
- 2 cups (8 oz.) Sargento® Shredded Reduced Fat Mozzarella Cheese
- 1/4 tsp. paprika
DIRECTIONS

Combine shrimp, pasta, olives and onion in large bowl.

Combine mayonnaise, pineapple juice and cocktail sauce in a small bowl. Pour 3/4 cup dressing over shrimp mixture; toss to coat. Add cheese; toss well. Sprinkle with paprika; pass remaining dressing.
