Tropical Shrimp and Pasta

INGREDIENTS

  • 12 oz. cooked medium shrimp, peeled and deveined or 2 cups diced cooked chicken
  • 6 oz. angel hair pasta, cooked and drained
  • 3/4 cup sliced pitted black olives
  • 1/2 cup finely chopped red onion
  • 1/2 cup fat-free or light mayonnaise
 

DIRECTIONS

    Combine shrimp, pasta, olives and onion in large bowl.

    Combine mayonnaise, pineapple juice and cocktail sauce in a small bowl. Pour 3/4 cup dressing over shrimp mixture; toss to coat. Add cheese; toss well. Sprinkle with paprika; pass remaining dressing.
