INGREDIENTS

  • 1 can (15 oz.) black beans, rinsed and drained
  • 1 ripe mango, peeled and diced or 1-1/2 cups bottled diced mango
  • 1/2 cup diced plum tomatoes
  • 1/2 cup thinly sliced green onions
  • 1/2 cup roasted cashews or peanuts
 

DIRECTIONS

    Combine dressing, lime juice, jerk seasoning and cumin in small bowl.

    Layer in order: lettuce, 1 cup cheese, beans, mango, tomatoes, green onions and remaining cheese in clear glass serving bowl. Drizzle with dressing and top with cashews.
