Caribbean Layered Cheddar Salad
INGREDIENTS
- 1/3 cup honey mustard dressing
- 1 Tbsp. lime juice
- 2 tsp. Caribbean jerk seasoning
- 1/2 tsp. ground cumin
- 3 cups shredded romaine lettuce or 1/2 of 10 oz. pkg. torn salad greens
- 2 cups (8 oz.) Sargento® Artisan Blends® Shredded Double Cheddar Cheese, divided
- 1 can (15 oz.) black beans, rinsed and drained
- 1 ripe mango, peeled and diced or 1-1/2 cups bottled diced mango
- 1/2 cup diced plum tomatoes
- 1/2 cup thinly sliced green onions
- 1/2 cup roasted cashews or peanuts

Combine dressing, lime juice, jerk seasoning and cumin in small bowl.

Layer in order: lettuce, 1 cup cheese, beans, mango, tomatoes, green onions and remaining cheese in clear glass serving bowl. Drizzle with dressing and top with cashews.
